Grand cru du Muscadet.
TERROIR : The soil is composed of a silty-sandy texture on the first 30 centimeters. The subsoil is composed of metamorphic rocks: gneiss with 2 micas. The parcel dedicated to this appellation is on a 15% slope facing south.
VINIFICATION: The vinification is innovative. Indeed, during a classic vinification on lees, the wine remains in tank in contact with the lees during 7 to 14 months, then it is bottled. This Cru must remain on its lees for at least 24 months. The Cru Monnières Saint Fiacre 2017 was left on its lees from September 2017 to March 2022, i.e. 56 months.
TASTING: Golden color. The nose is fruity, very complex. The mouth is full and structured. The minerality of the terroir is present but is very well balanced. The finish is buttery, perfectly balanced. It can be kept for about 15 years.
WINE AND FOOD Pairings: It is best paired with fine gastronomic cuisine of sea or river fish, but also with white meats and certain cheeses.
