“What have they come up with this time with this sparkling red wine?”
The idea is 3000 years old, it came from a pre-Roman civilisation of great sailors and artisans: the Etruscans! Pyjama Caaaaaaat is a natural sparkling red wine, a PetNat that Christophe absolutely wanted to make after tasting delicious, easy-drinking and subtle examples of it.

Terroir
Volcanic hillside plots, facing east, vines 20 to 40 years old planted on granitic soils.
Winemaking
Hand-picked, with grapes sorted in the vineyard. The wine is produced in two stages: most of the Gamay grapes are gently pressed (liquid phase fermentation), while a small proportion are macerated for a few days to obtain color, round out the body and give the wine fullness (solid phase fermentation). Bottling takes place during alcoholic fermentation, according to the ancestral method. The wine is disgorged after 10 months' ageing on laths. Indigenous yeasts, no inputs during the entire winemaking process. Only a small amount of sulfites is added at disgorging (<10mg/l), to avoid excessive absorption of dissolved oxygen (and the appearance of a “mouse taste”).
Winegrower
This wine is a “four-mains”, created by Christophe Kaczmarek and Romain Paire, winemaker at Domaine des Pothiers, Côte Ronnaise.
As always at Caaaaaaat, the wines are vinified, blended, bottled and packaged on the estate. From the vine to the cellar, everything is done with respect, with the aim of regenerating the soil, promoting biodiversity and respecting the people who are part of it.
