Description of the cuvée
In the vineyard:
Pruning Guyot Poussard - Soil tillage - first year of organic conversion.
Manual harvest in 15kg slatted crates.
Average age of the vines : from 4 to a 25 years according to the plots.
Soils of schists, sandstone and limes.
Coming from 3 differents plots.
In the cellar:
Regulation of the harvest temperature in positive cold chamber.
Pre-fermentation cold maceration with 1/3 of whole bunch.
Wild yeasts fermentation.
4 weeks maceration with a few soft pump-over.
Soft pneumatic pressing, we end the pressing according to tasting.
Blending accoring the tasting of the free-run and pressing wines.
Ageing in fiberglass tanks for 6 months.
Not filtered.
Tasting:
A wine that finds balance between fruit, strength and suppleness.
Ageing potential : 6 to 8 years. Can be enjoyed from now one but will reveal perfectly soft and silky tannins in 1 to 2 years.
